1 c. white flour
1½ c. whole wheat flour
1 Tbs. sugar
1 tsp. salt
½ lb. (2 sticks) butter, frozen
½ c. ice water
Blend flours, sugar, and salt. Using two knives (or more, if seeking a challenge) cut the butter into the flour until a fine meal is achieved. Slowly blend in the water until mixture has moistened to a ball; those with experience in Chinese water torture will have a leg up when it comes to mastering the slow drip. Chill for 30 minutes; roll.
Note: Pastry is a frigid creature that prefers not to be touched. Kneed not lest the need be great.
